Chocolate, orange zest & strawberry spelt scones

Spelt is definitely one of my favourite grains (especially in scone form). Wholemeal spelt flour has a great neutral taste and is finer than other wholegrain flours but is still high in fibre and goodness meaning a nourishing, guilt free coffee time treat for you but the fruit & chocolate in this recipe make it quite a favourite with the kids also!
Try to use organic fruit and dairy products where possible in this recipe.



Recipe (makes 7/ 8)
-500g wholemeal spelt flour
-15g baking powder
-3g salt
-125g softened butter
-225ml milk
-1 medium egg
-100g dark chocolate (Go as dark as your taste allows & use unrefined sugar/ diabetic friendly as needed but be weary of artificial sweeteners e.g aspartame, sucralose etc which can alter good gut bacteria)
-Zest of 2 large oranges
-Approx 350g strawberries
-1 tspn orange extract

Directions

Preheat the oven to 180C
Add the baking powder, salt & zest to the flour & stir.
Cube the butter then rub the butter into the flour with your fingertips.
Chop the chocolate and berries into small chunks then add to the flour mix and give it a quick stir.
Beat the egg & orange extract into the milk then add this to the dry ingredients and mix everything together gently with a spatula, don’t over mix or use an electric beater for this part otherwise they can end up very dense.
Tear off handfuls of dough, shape into balls and place onto baking parchment then bake at 180C for approx. 20 mins.
Then eat them quick before the kids get their hands on them!! xx
