2 Minute Sweet citrusy Baobab frosting with coconut chia cacao cupcakes

Firstly, these look a bit haphazard as I couldn't wait to eat them so didn't bother getting a spoon/piping set & just smeared it on with a fork!
I whipped up this delicious, citrus baobab frosting (in less than 2 mins) which tastes amazing plus it is packed with Vitamin C & antioxidants!

Frosting

The frosting is super easy and takes 2 minutes to make.
Frosting for 6 small cupcakes:
Juice 1 lemon into a bowl and add 2 generous tablespoons of baobab powder
Whisk this in until a thick mix forms, if you've made it too thick then add some melted coconut oil (or even add some of it anyway if you think you'd like the taste a bit creamier) then spread on your cupcakes.
OR
If this is too citrusy for you then a slightly different recipe is:
-2 Tbspn melted coconut oil
-2 Tbspn water
-10/15g baobab (depending on how thick you want the frosting)

I quite like this sweet yet lemon citrus taste as it cuts nicely through the muffins I made which contain cacao which can sometimes be overpowering but the frosting blends brilliantly with it.

For 6 small cupcakes


*2 small eggs
*1 Tbspn milk
*1 teaspoon cacao powder
*2 Tbspns shredded coconut
*1 & 1/2 Tbspns chia seeds
*1 Tbspn miracle matcha (if you don't have this then use ground flaxseeds)
*1 heaped Tbspn spelt flour (or any other flour) & a pinch of baking powder

Whisk all the ingredients together and pour into silicon muffin moulds and bake at 160C for about 20mins. Let them cool slightly before smearing on the frosting & enjoy!
